炸炉分类简述 Brief

炸炉、扒炉等西餐炉具,90年代左右，只有星级酒店和高档的西餐馆采用；

随着快餐连锁店的迅速发展，加之国产设备性能、种类的完善和提高，目前已经成为非常普及的常用设备；

以下就常规的扒炉作大致的分类：

■	能源分类；
	。电热扒炉：对温度的精确度要求比较高的，一般选用电加热的种类；
	。燃气扒炉：对快速升温要求比较高的，一般选用燃气加热的种类；


■	使用位置分类；
	。台式扒炉：快餐店、中小型西餐房常采用；
	。立式扒炉：中大型西式厨房常采用，一般扒炉下方连柜座；


■	款式分类；
	。扒炉：全平扒炉、半平半坑扒炉、全坑扒炉等；
	。烧烤炉：火山石烧烤炉、无烟烧烤炉、日式烧烤炉等；
